Tlayudas: what are they and why did they beat Peruvian Ceviche?

After a heart-stopping Twitter poll in which the gastronomic series Street Food Latin America asked its followers what was the best street food in the region, the social network jumped on visits to support the different dishes proposed. The finalists were the Mexican Tlayuda, the Peruvian Ceviche and the Argentine Choripan.

According to the Larousse Encyclopedic Dictionary of Mexican Gastronomy, this traditional dish from Oaxaca originated in the Central Valleys and consists of the use of a large corn tortilla (approximately 30 centimeters). Its use can vary between salads as well as snacks or breakfasts. In the latter cases, they would be accompanied by powdered sugar and coffee.

Its preparation although simple involves different ingredients that can vary by areas and tastes. The traditional Tlayuda consists of «seat», which is made from the leftover pieces of the pig, such as kidneys and buche, in addition to fat, beans, chorizo, cheese, jerky and is accompanied with chili.

Unfortunately, the Peruvian Ceviche came in second place popularizing the hashtag #Perdimos (we lost) on Twitter. Apparently the votes were not enough and many were left with a discomfort on the palate upon realizing the news. Some claimed that it was a demographic issue. «There are more Mexicans than Peruvians,» they said in some comments, trying to ease the pain of the loss.

Peruvian Ceviche has been acclaimed worldwide for its exquisite flavor and texture. It is one of the favorite dishes and one of the first to be requested by tourists upon arrival in our country. Although he has not won this time, it should be noted that this delicious dish among the many that Peru has represents us both inside and outside the country. Thus, Peru has stood out as Best Culinary Destination in the World at the World Travel Awards for 8 consecutive years in 2019, as well as best Cultural Destination and Best Tourist Attraction with Machu Picchhu.
